Ingredients

  • 907.2 g beef shank
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 tablespoons curry powder
  • 4 cups water
  • 2 carrots, sliced carrots
  • 1 tablespoon soy sauce
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 bunch cilantro, for garnish

Method

    In a large pot, heat the vegetable oil over medium heat. Add sliced onions and sauté until they become translucent.

    Add minced garlic and sliced ginger into the pot, stirring for about 1 minute until fragrant.

    Add the beef shank pieces to the pot and brown on all sides.

    Stir in the curry powder, soy sauce, salt, and black pepper, mixing well to coat the beef.

    Pour in the water, bring to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours.

    Add the sliced carrots to the pot and continue to simmer for another 30 minutes until the beef is tender.
