Experience the rich, hearty flavors of traditional Scandinavian blodpudding, made with pig's blood and oat flour, perfect for a cozy weeknight dinner or a unique brunch that will impress your guests.

Ingredients

  • 500 g pig's blood
  • 200 g oat flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 medium onion

Method

  1. 1

Preheat your oven to 180°C (350°F).

  2. 2

In a mixing bowl, combine the pig's blood, oat flour, salt, black pepper, and finely chopped onion. Mix well until you have a smooth batter.

  3. 3

Grease a loaf pan or baking dish lightly with oil.

  4. 4

Pour the mixture into the prepared loaf pan, smoothing the top with a spatula.

  5. 5

Bake in the preheated oven for about 60 minutes, or until the pudding is firm to the touch.

  6. 6

Remove from the oven and allow it to cool slightly before slicing.

  7. 7

Serve warm or cold, typically with lingonberry sauce and fried onions on top.
