- 4 large eggs
- 100 grams granulated sugar
- 75 grams all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 200 grams jam or whipped cream
- powdered sugar to taste for dusting

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

In a bowl, beat the egg yolks with granulated sugar and vanilla extract until the mixture is creamy and pale.

In a separate bowl, whip the egg whites until stiff peaks form. Carefully fold the egg whites into the egg yolk mixture.

Sift in the flour and baking powder, then gently fold until just combined to avoid deflating the mixture.

Spread the batter evenly onto the prepared baking sheet and bake for about 10 minutes, or until lightly golden and springy to touch.

Once baked, immediately turn the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
