Savor the vibrant flavors of Korea with Bindaetteok, a delightful mung bean pancake packed with tangy kimchi and fresh green onions. Perfect for a cozy weeknight dinner or a fun appetizer at gatherings.

Ingredients

  • 1 cup mung beans
  • 1 cup water
  • 1 cup chopped kimchi
  • 1 cup chopped green onion
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt

Method

  1. 1

Rinse and soak the mung beans in water for at least 4 hours or overnight.

  2. 2

Drain the soaked mung beans and blend them with 1 cup of water until smooth.

  3. 3

In a mixing bowl, combine the mung bean batter with chopped kimchi, green onions, soy sauce, and salt. Mix well.

  4. 4

Heat a non-stick skillet over medium heat and add vegetable oil.

  5. 5

Pour a ladleful of the mixture onto the skillet and spread it into a round shape. Cook for about 3-4 minutes on each side until golden brown.

  6. 6

Repeat with the remaining batter, adding more oil to the skillet as needed.

  7. 7

Serve the bindaetteok hot with a dipping sauce made of soy sauce and vinegar if desired.
