Experience the bold flavors of South Africa with homemade biltong, a savory dried beef snack seasoned with coriander, chili, and a splash of red wine vinegar. Perfect for game day or as a protein-packed treat anytime.

Ingredients

  • 1 kg beef (silverside or top round)
  • 2 tablespoons coarse sea salt
  • 1 tablespoon black pepper
  • 1 tablespoon coriander seeds
  • 1 tablespoon brown sugar
  • 1 cup red wine vinegar
  • 1 tablespoon chili flakes

Method

  1. 1

Start by slicing the beef into strips, about 1 inch thick. You can cut with the grain or against it, depending on your preference for texture.

  2. 2

In a bowl, mix the salt, black pepper, crushed coriander seeds, brown sugar (if using), and chili flakes (if using) together.

  3. 3

Rub the spice mixture thoroughly over the beef strips, ensuring all sides are coated evenly.

  4. 4

Place the seasoned beef strips in a container and cover them with red wine vinegar. Make sure the beef is well-submerged.

  5. 5

Cover the container and let the beef marinate in the refrigerator for about 24 hours.

  6. 6

After marinating, remove the beef strips and hang them in a cool, dry place or a well-ventilated area. Ensure they are spaced apart to allow airflow.

  7. 7

Let the biltong dry for about 3 to 7 days, depending on your preferred dryness. The longer it dries, the more intense the flavor will be.

  8. 8

Once dried to your liking, slice the biltong thinly and enjoy as a snack or protein-rich treat.
