- 2 tablespoons coarse sea salt
- 1 tablespoon black pepper
- 1 tablespoon coriander seeds
- 1 tablespoon brown sugar
- 1 cup red wine vinegar
- 1 tablespoon chili flakes

Start by slicing the beef into strips, about 1 inch thick. You can cut with the grain or against it, depending on your preference for texture.

In a bowl, mix the salt, black pepper, crushed coriander seeds, brown sugar (if using), and chili flakes (if using) together.

Rub the spice mixture thoroughly over the beef strips, ensuring all sides are coated evenly.

Place the seasoned beef strips in a container and cover them with red wine vinegar. Make sure the beef is well-submerged.
