Indulge in the sweet, fluffy delight of Berliner, a traditional German pastry filled with luscious fruit jam and dusted with powdered sugar. Perfect for a cozy weekend brunch or a festive gathering with loved ones.

- 500 g all-purpose flour
- 75 g granulated sugar
- 1 packet active dry yeast
- 250 ml whole milk
- 2 large eggs
- 100 g unsalted butter
- 1 teaspoon vanilla extract
- 1 cup fruit jam or jelly
- 100 g powdered sugar

In a small bowl, dissolve the yeast in warm milk with 1 tablespoon of sugar. Let sit for about 10 minutes until frothy.

In a large mixing bowl, combine the flour, remaining sugar, and a pinch of salt. Make a well in the center and add the eggs, melted butter, vanilla extract, and the yeast mixture.

Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours or until doubled in size.

Once risen, punch down the dough and roll it into a log about 1 inch in diameter. Cut into 12 equal pieces and shape each piece into a ball.

Place the dough balls on a baking sheet lined with parchment paper, cover, and let rise for another 30 minutes.

Heat oil in a deep fryer or a deep pot to 180°C (350°F). Fry the dough balls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Once cooled, fill each Berliner with fruit jam using a pastry bag, and dust with powdered sugar before serving.
