Savor the warmth of this comforting Berkoukes, a delightful North African dish featuring tender pasta, vibrant zucchini, and carrots simmered in fragrant vegetable broth. Perfect for a cozy weeknight dinner or a nourishing lunch.

Ingredients

  • 1 cup berkoukes (small pasta)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchinis, diced
  • 2 medium carrots, diced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • Salt and pepper to taste Ingredient 9

Method

  1. 1

In a large pot, heat the olive oil over medium heat.

  2. 2

Add the chopped onion and sauté until translucent, about 5 minutes.

  3. 3

Stir in the minced garlic and cook for another minute until aromatic.

  4. 4

Add the diced zucchinis and carrots, and sauté for about 5-7 minutes until they begin to soften.

  5. 5

Pour in the vegetable broth and bring to a boil. Stir in the berkoukes and ground cumin.

  6. 6

Reduce heat to low, cover, and let simmer for about 30 minutes, stirring occasionally, until the berkoukes are cooked through.

  7. 7

Season with salt and pepper to taste. Remove from heat and let sit for a few minutes.

  8. 8

Serve warm, garnished with fresh herbs if desired.
