- 2 medium eggplants
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon salt
- 2 tablespoons rice flour
- 4 tablespoons mustard oil
- 1 pinch asafoetida (hing)

Wash and slice the eggplants into thin rounds. Sprinkle a little salt and set aside for 10 minutes to remove excess moisture.

In a bowl, mix the turmeric powder, red chili powder, salt, and rice flour together.

Coat each eggplant slice with the spice mixture evenly.

Heat the mustard oil in a frying pan over medium heat. Once hot, add a pinch of asafoetida if using.

Fry the coated eggplant slices in batches until golden brown and crispy, about 2-3 minutes on each side.
