Savor the rich flavors of this traditional Czech dish featuring tender pheasant, smoky bacon, and earthy mushrooms, simmered to perfection. Ideal for a cozy family dinner or a special gathering with friends.

- 1 whole pheasant
- 150 g bacon
- 2 medium onions
- 2 cloves garlic
- 200 g mushrooms
- 300 ml chicken broth
- 1 tbsp fresh thyme
- to taste salt and pepper
Method

Preheat your oven to 180°C (350°F).

In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pan.

In the same skillet, add the chopped onions and minced garlic. Sauté until the onions are translucent.

Add the sliced mushrooms to the skillet and cook until they are soft. Stir in the thyme, salt, and pepper, then mix in the cooked bacon.

Stuff the pheasant with the mushroom and bacon mixture, then place it in a roasting pan.

Pour the chicken broth around the pheasant in the pan and cover it with aluminum foil.

Roast in the preheated oven for about 1.5 hours, or until the pheasant is cooked through and the juices run clear.

Remove the foil in the last 20 minutes for a crispy skin. Let it rest for 10 minutes before carving and serving.
