In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onions and sauté until translucent.

Add the minced garlic and grated beets to the pot. Cook for about 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring the mixture to a boil. Add the bay leaf, vinegar, sugar, salt, and pepper.

Lower the heat and let it simmer for 45 minutes until the beets are tender.

Remove the bay leaf and taste the soup. Adjust seasoning with more salt and pepper if needed.

Serve hot, garnished with a dollop of sour cream if desired.
