- 7 g instant yeast
- 200 ml milk
- 75 g caster sugar
- 1 tsp mixed spice powder
- 1 tsp salt
- 100 g sultanas
- 100 g raisins
- 1 large egg

In a large bowl, combine the bread flour, instant yeast, caster sugar, mixed spice powder, and salt.

Make a well in the center of the dry ingredients, and pour in the warmed milk and beaten egg.

Mix the ingredients together until a dough forms, then knead on a lightly floured surface for about 10 minutes until smooth.

Incorporate the sultanas and raisins into the dough, kneading until evenly distributed.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 190°C (375°F). Punch down the risen dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.
