Indulge in the warm, comforting flavors of Barmbrack, a traditional Irish fruit bread studded with sultanas and raisins. Perfect for cozy evenings or festive gatherings, this sweet treat pairs beautifully with tea or coffee.

Ingredients

  • 500 g strong white bread flour
  • 7 g instant yeast
  • 200 ml milk
  • 75 g caster sugar
  • 1 tsp mixed spice powder
  • 1 tsp salt
  • 100 g sultanas
  • 100 g raisins
  • 1 large egg

Method

  1. 1

In a large bowl, combine the bread flour, instant yeast, caster sugar, mixed spice powder, and salt.

  2. 2

Make a well in the center of the dry ingredients, and pour in the warmed milk and beaten egg.

  3. 3

Mix the ingredients together until a dough forms, then knead on a lightly floured surface for about 10 minutes until smooth.

  4. 4

Incorporate the sultanas and raisins into the dough, kneading until evenly distributed.

  5. 5

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  6. 6

Preheat the oven to 190°C (375°F). Punch down the risen dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.

  7. 7

Let the shaped dough rise for another 30 minutes. Bake in the preheated oven for 30-40 minutes, or until golden brown and sounds hollow when tapped on the bottom.

  8. 8

Allow to cool on a wire rack before slicing. Serve fresh or toasted.
