Ingredients

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1 cup water
  • 1 tsp turmeric powder
  • 200 grams shrimp
  • 100 grams bean sprouts
  • 4 leaves green lettuce
  • fresh herbs to taste mint and cilantro

Method

    In a mixing bowl, combine rice flour, coconut milk, water, and turmeric powder to create a smooth batter.

    Heat a non-stick skillet over medium heat and add a small amount of oil.

    Pour in a ladle of batter and swirl it around to form a thin layer, cooking for about 2 minutes.

    Add shrimp and bean sprouts on one half of the crepe, then fold the other half over and cook for another 2-3 minutes until the shrimp is cooked through.
