Ingredients

  • 4 ripe bananas
  • 200 g glutinous rice flour
  • 150 ml coconut milk
  • 100 g sugar
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 50 g tapioca starch
  • 1 tbsp cooking oil

Method

    Preheat your oven to 180°C (350°F) and grease a loaf pan with cooking oil.

    In a large mixing bowl, mash the ripe bananas until smooth.

    Add the glutinous rice flour, coconut milk, sugar, salt, vanilla extract, and tapioca starch to the mashed bananas and mix until well combined.

    Pour the batter into the prepared loaf pan and spread it evenly.

    Bake in the preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean.

    Allow the Banh Chuoi to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
