Savor the rich, caramelized flavors of Balsamic & Beer Onions, where sweet onions meet tangy balsamic and hearty beer. This delightful side dish is perfect for a cozy weeknight dinner or a festive gathering with friends.

Ingredients

  • 8 onions, peeled
  • 50 ml good quality olive oil
  • salt & ground pepper
  • 125 ml balsamic vinegar
  • 500 ml good quality local artisan beer
  • 20 g fresh parsley

Method

    Cut the onions in quarters, then in half again.

    Place onions, olive oil, and a pinch of salt into a frying pan. Cook on moderate heat, stirring constantly, until the onions start to brown.

    Add the balsamic vinegar and turn up the heat, reducing the vinegar quickly until it starts to coat the onions.

    Add the beer and reduce until all the liquid has evaporated.

    Allow to cool slightly before adding and infusing the parsley. Check the seasoning.

A sweet sour accompaniment to meat and cheese dishes.
