Ingredients

  • 2 medium eggplants
  • 1 medium onion
  • 2 green chilies green chilies
  • 2 tablespoons mustard oil
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander leaves

Method

    Preheat your oven or grill to 200°C (400°F).

    Prick the eggplants with a fork and place them on a baking tray.

    Roast the eggplants for about 10 minutes until the skin is charred and the flesh is soft. Remove from heat and let them cool slightly.

    Once cool, peel off the charred skin and mash the eggplant flesh in a bowl.

    Add the chopped onions, green chilies, mustard oil, and salt to the mashed eggplant. Mix well until combined.
