Ingredients

  • 2 medium eggplants
  • 1 large onion
  • 2 medium tomatoes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • to taste salt
  • 2 tablespoons cilantro

Method

    Roast the eggplants over an open flame or in an oven until the skin is charred and the flesh is soft, about 15-20 minutes. Let them cool, then peel and mash the flesh.

    Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

    Add the chopped onions and sauté until golden brown.

    Stir in the chopped tomatoes and cook until they become soft and mushy.
