Experience the fragrant allure of Persian cuisine with Baghali Polo, a delightful blend of basmati rice, tender fava beans, and fresh dill. Perfect for a cozy weeknight dinner or a festive gathering, this dish is sure to impress.
IngredientsWhat you need
- 2 cups Basmati rice
- 1 cup fava beans
- 1 cup dill
- 4 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 large potato
- Water for cooking rice
Method
- 1
Rinse the Basmati rice under cold water until the water runs clear, then soak it in water for at least 1 hour.
- 2
In a large pot, bring water to a boil and add the soaked rice along with 1 teaspoon of salt. Cook for about 10 minutes until the rice is slightly undercooked.
- 3
While the rice is cooking, in a separate pot, bring a small amount of water to a boil and add the fava beans for about 5-7 minutes, then drain.
- 4
In the last minute of cooking the rice, add the blanched fava beans and chopped dill, stirring gently to combine.
- 5
Drain the rice and beans mixture and set aside. In the same pot, melt the butter and layer the sliced potato at the bottom to create a crispy layer.
- 6
Add the rice and fava bean mixture on top of the potato, cover the pot, and let it steam on low heat for about 20 minutes.
- 7
Once done, gently fluff the rice and serve hot, garnished with additional dill if desired.
- 8
Enjoy your Baghali Polo with your choice of meat or as a vegetarian dish!
