  • 500 g salted cod
  • 4 medium potatoes
  • 2 medium onions
  • 3 cloves garlic
  • 100 ml olive oil
  • 4 large eggs
  • 100 g black olives

Method

    Preheat the oven to 180°C (350°F).

    In a large pot, boil the soaked cod for about 20 minutes until tender, then drain and let cool before flaking it into large pieces.

    In a separate pot, boil the sliced potatoes until just tender. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Cook the onions and garlic until softened and translucent.

    Layer the flaked cod, cooked potatoes, and sautéed onions in a greased baking dish, starting with a layer of cod, then potatoes, and finishing with the onions.

    Top with sliced boiled eggs and black olives. Drizzle with a bit more olive oil and bake in the preheated oven for about 15-20 minutes.

    Remove from the oven and garnish with chopped fresh parsley before serving.
