Ingredients

  • 2 medium eggplants
  • 2 tablespoons tahini
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 lemon juice
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • optional for garnish parsley

Method

    Preheat your oven to 400°F (200°C).

    Prick the eggplants with a fork to allow steam to escape and place them on a baking sheet.

    Roast the eggplants in the oven for about 30 minutes or until the skin is charred and the flesh is soft.

    Remove the eggplants from the oven and let them cool slightly before peeling off the skin.

    In a bowl, combine the roasted eggplant flesh, tahini, garlic, olive oil, lemon juice, salt, and cumin. Mash together until smooth.
