- 1 large eggplant
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 clove garlic
- 2 tablespoons olive oil

Preheat your oven to 400°F (200°C).

Poke a few holes in the eggplant with a fork to let steam escape.

Place the eggplant on a baking sheet and roast in the oven for about 30 minutes, or until the skin is charred and the flesh is soft.

Remove the eggplant from the oven and let it cool slightly. Once cool enough to handle, scoop out the flesh and place it in a mixing bowl.

Add tahini, lemon juice, minced garlic, and olive oil to the bowl with the eggplant flesh. Mix until smooth and creamy.
