Savor the vibrant flavors of Ayam Penyet, an Indonesian dish featuring tender chicken thighs smothered in a spicy garlic-chili sauce. Perfect for a weeknight dinner that brings a taste of Southeast Asia to your table.
IngredientsWhat you need
- 4 pieces chicken thighs
- 1 cup water
- 2 tablespoons vegetable oil
- 1 tablespoon salt
- 3 cloves garlic
- 2 pieces bird's eye chili
- 1 tablespoon terasi (shrimp paste)
- 2 tablespoons lime juice
Method
- 1
Marinate the chicken thighs with salt and lime juice. Let it sit for about 15 minutes.
- 2
Boil the marinated chicken in water for about 15 minutes until it is cooked through.
- 3
Once cooked, remove the chicken and let it drain. Reserve some of the boiling water for later use.
- 4
In a pan, heat the vegetable oil over medium heat. Fry the mashed garlic and bird's eye chili until fragrant.
- 5
Add in the cooked chicken, and if using, the terasi. Fry for an additional 5 minutes, pressing down on the chicken to get a crispy skin.
- 6
Serve the Ayam Penyet with steamed rice, a side of fresh cucumber, and sambal (spicy sauce) if desired.
