- 3 tablespoons vegetable oil
- 5 pieces kaffir lime leaves
- 2 stalks lemongrass
- 6 cloves garlic
- 4 pieces shallots
- 1 teaspoon turmeric powder
- 3 teaspoons salt
- 1 teaspoon coriander powder
- 1 teaspoon black pepper
- 2 banana leaves for wrapping chicken

Preheat your oven to 180°C (350°F).

In a blender, combine garlic, shallots, turmeric powder, coriander powder, black pepper, and salt to create a spice paste.

Heat vegetable oil in a pan over medium heat and sauté the spice paste until fragrant, about 5 minutes.

Rub the spice paste all over the chicken, and inside the cavity. Add the torn kaffir lime leaves and lemongrass inside the chicken.

Wrap the chicken in banana leaves, securing it tightly. Place it in a baking pan.

Bake in the preheated oven for about 2 hours, or until the chicken is fully cooked and tender.
