Experience the comforting flavors of Afghan cuisine with Aushak, delightful dumplings filled with tender leeks and served with a tangy yogurt sauce. Perfect for a cozy weeknight dinner or a special gathering with friends.

Ingredients

  • 250 grams leeks
  • 200 grams dumpling wrappers
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 cup yogurt
  • 1 teaspoon dried mint
  • 2 cups water
  • 1 teaspoon pepper

Method

    In a pan, heat olive oil over medium heat and sauté the finely chopped leeks until soft and translucent, about 5-7 minutes.

    Add salt and pepper to the sautéed leeks, mix well, and let cool slightly.

    Take a dumpling wrapper and place a small spoonful of the leek mixture in the center. Moisten the edges with water, fold over, and seal the edges tightly to form a dumpling.

    Repeat the process until all leeks are used up and you have formed all dumplings.

    In a pot, bring 2 cups of water to a boil. Carefully drop the dumplings in and cook for about 5-7 minutes or until they float to the surface.
