Experience the comforting flavors of Afghan cuisine with Aushak, delightful dumplings filled with tender leeks and served with a tangy yogurt sauce. Perfect for a cozy weeknight dinner or a special gathering with friends.
IngredientsWhat you need
- 250 grams leeks
- 200 grams dumpling wrappers
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 cup yogurt
- 1 teaspoon dried mint
- 2 cups water
- 1 teaspoon pepper
Method
- 1
In a pan, heat olive oil over medium heat and sauté the finely chopped leeks until soft and translucent, about 5-7 minutes.
- 2
Add salt and pepper to the sautéed leeks, mix well, and let cool slightly.
- 3
Take a dumpling wrapper and place a small spoonful of the leek mixture in the center. Moisten the edges with water, fold over, and seal the edges tightly to form a dumpling.
- 4
Repeat the process until all leeks are used up and you have formed all dumplings.
- 5
In a pot, bring 2 cups of water to a boil. Carefully drop the dumplings in and cook for about 5-7 minutes or until they float to the surface.
- 6
Once cooked, remove the dumplings from the water and let them drain briefly.
- 7
Serve the dumplings warm topped with yogurt and a sprinkle of dried mint.
- 8
Enjoy your homemade Aushak as a delicious appetizer or main dish!
