Savor the flavors of Afghan cuisine with Ashak, delicate dumplings filled with leeks and served with a tangy yogurt sauce. Ideal for a cozy weeknight dinner or a special gathering with friends.

- 3 cups all-purpose flour
- 1 cup water
- 1 tsp salt
- 2 cups leeks
- 1 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups yogurt
- 1 cup ground meat (optional)

In a large bowl, combine the all-purpose flour, salt, and water. Knead the mixture until it forms a smooth dough. Cover and let it rest for 20 minutes.

In a skillet, heat the vegetable oil over medium heat. Add the finely chopped leeks, and sauté until they are soft and translucent, about 5-7 minutes. Season with black pepper.

If using, cook the ground meat in the same skillet until browned and cooked through. Mix it with the sautéed leeks and set aside to cool.

On a floured surface, roll out the dough to about 1/8 inch thickness. Cut out circles using a cup or a round cutter.

Place a spoonful of the leek (and meat, if using) mixture in the center of each dough circle. Fold the dough over to create a half-moon shape, sealing the edges tightly.

In a large pot of boiling salted water, gently add the filled Ashak and cook for about 10-15 minutes until they float to the top. Remove and drain.

Serve the Ashak warm, topped with yogurt and additional seasoning if desired.
