Savor the bold flavors of Argentine Asado, featuring tender beef and pork ribs seasoned to perfection and served with vibrant chimichurri. Ideal for a weekend gathering or a festive barbecue with friends and family.
IngredientsWhat you need
- 2 kg beef short ribs
- 1 kg pork ribs
- 4 tablespoons sea salt
- 2 tablespoons black pepper
- 1 cup chimichurri sauce
- 1 bunch fresh parsley
- 1 kg potatoes
Method
- 1
Prepare your grill or asador with a wood or charcoal fire, allowing it to burn down until you have hot embers.
- 2
Season the beef and pork ribs generously with sea salt and black pepper.
- 3
Once the fire is ready, place the ribs on the grill grates, bone side down.
- 4
Cook the meat for about 1.5 to 2 hours, turning occasionally, until the ribs are well browned and tender.
- 5
If using potatoes, wrap them in aluminum foil and place them on the grill to cook alongside the meat for about 1 hour.
- 6
Once the ribs are cooked, remove them from the grill and let them rest for about 10 minutes.
- 7
Serve the ribs hot with chimichurri sauce and garnish with fresh parsley.
