Ingredients

  • 2 cups arborio rice
  • 4 cups coconut milk
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts

Method

    In a large pot, combine the arborio rice and coconut milk over medium heat.

    Stir the mixture well and bring it to a gentle boil.

    Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

    After 30 minutes, add the brown sugar, ground cinnamon, vanilla extract, and raisins. Mix well.

    Continue to simmer for another 10-15 minutes until the rice is tender and the mixture is creamy.
