Indulge in the rich flavors of Arroz de Pato, a Portuguese duck rice dish that combines succulent duck, aromatic onions, and vibrant peas. Perfect for a cozy family dinner or a special gathering with friends.
IngredientsWhat you need
- 1 whole duck
- 1 cup medium onions
- 2 cloves garlic
- 3 cups arborio rice
- 4 cups duck broth
- 1 teaspoon paprika
- 1 cup green peas
- 1 bunch fresh parsley
Method
- 1
In a large pot, cook the duck pieces over medium heat until browned on all sides. Remove and set aside.
- 2
In the same pot, add the chopped onions and garlic and sauté until translucent.
- 3
Add the arborio rice and paprika, stirring to coat the rice with the oils and flavors from the pot.
- 4
Return the duck pieces to the pot and add the duck broth. Bring to a boil, then reduce to a simmer and cover.
- 5
Cook for about 30-40 minutes, or until the rice is tender and the liquid is absorbed, stirring occasionally.
- 6
Add the green peas in the last 5 minutes of cooking, allowing them to warm through.
- 7
Remove the duck pieces, shred the meat, and return it to the rice. Mix well.
- 8
Serve hot, garnished with chopped parsley.
