In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent.

Stir in minced garlic and paprika, cooking for an additional minute until fragrant.

Add the arborio rice to the pan, stirring to coat it with the oil and flavors. Toast the rice for 2-3 minutes.
