- 4 cups coconut milk
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup toasted coconut flakes

Rinse the rice under cold water until the water runs clear to remove excess starch.

In a large pot, combine the rinsed rice, coconut milk, sugar, and salt. Stir well to combine.

Bring the mixture to a boil over medium heat, stirring occasionally to ensure nothing sticks to the bottom.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes or until the rice is tender and has absorbed most of the liquid.

Remove from heat and stir in the vanilla extract and raisins, if using. Let it sit covered for an additional 10 minutes.
