Savor the rich flavors of Arroz de Cabidela, a traditional Portuguese dish where tender chicken simmers with aromatic spices and rice, creating a comforting meal perfect for family gatherings or cozy weeknight dinners.

Ingredients

  • 500 g chicken (cut into pieces)
  • 1 cup rice
  • 1 large onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tbsp white wine vinegar
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp paprika

Method

    Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

    Add the chicken pieces to the pot and brown them on all sides for about 10 minutes.

    Sprinkle in the paprika and stir well to coat the chicken evenly. Then, add the white wine vinegar to deglaze the pot, scraping up any browned bits.

    Pour in the chicken broth, bring to a boil, then reduce the heat to a simmer. Cook for about 30 minutes until the chicken is tender.
