Savor the rich flavors of Arroz de Cabidela, a traditional Portuguese dish where tender chicken simmers with aromatic spices and rice, creating a comforting meal perfect for family gatherings or cozy weeknight dinners.
IngredientsWhat you need
- 500 g chicken (cut into pieces)
- 1 cup rice
- 1 large onion (finely chopped)
- 4 cloves garlic (minced)
- 2 tbsp white wine vinegar
- 4 cups chicken broth
- 1 tbsp olive oil
- 1 tsp paprika
Method
- 1
Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
- 2
Add the chicken pieces to the pot and brown them on all sides for about 10 minutes.
- 3
Sprinkle in the paprika and stir well to coat the chicken evenly. Then, add the white wine vinegar to deglaze the pot, scraping up any browned bits.
- 4
Pour in the chicken broth, bring to a boil, then reduce the heat to a simmer. Cook for about 30 minutes until the chicken is tender.
- 5
Remove the chicken from the pot and set aside. Stir in the rice into the broth and let it cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
- 6
Meanwhile, shred the chicken into smaller pieces. Once the rice is ready, add the shredded chicken back into the pot and mix it well.
- 7
Let the mixture simmer for another 5 minutes, ensuring everything is heated through. Adjust seasoning with salt and pepper if necessary.
- 8
Serve hot, garnished with fresh herbs if desired. Enjoy your Arroz de Cabidela!
