- 2 cups cooked jasmine rice
- 1 cup chicken breast, diced
- 1 cup green onions, chopped
- 2 large eggs
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
Method

Heat sesame oil in a large skillet or wok over medium-high heat.

Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.

Push the chicken to one side, add the minced ginger and garlic to the other side, and sauté for about 1 minute until fragrant.

Add the cooked rice to the skillet, breaking up any clumps and mixing with the chicken, ginger, and garlic.

Create a well in the center of the rice and crack the eggs into it. Scramble the eggs until fully cooked, then mix into the rice.

Pour the soy sauce over the rice, add the chopped green onions, and stir-fry everything together for another 2-3 minutes.

Taste and adjust seasoning if necessary, then serve hot.
