Savor the bold flavors of Peru with these tender anticuchos, marinated beef heart skewers infused with aji panca and garlic. Perfect for a weekend barbecue or a unique dinner party treat.
IngredientsWhat you need
- 500 grams beef heart
- 1 cup red wine vinegar
- 2 tablespoons aji panca paste
- 2 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 skewers wooden or metal skewers
Method
- 1
In a large bowl, combine the red wine vinegar, aji panca paste, minced garlic, cumin, salt, and black pepper. Mix well to create a marinade.
- 2
Add the beef heart cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- 3
Preheat your grill to medium-high heat.
- 4
Thread the marinated beef heart onto the skewers, packing the pieces closely together.
- 5
Grill the skewers for about 3-4 minutes on each side, or until the beef is nicely charred and cooked to your preference.
- 6
Remove from the grill and let rest for a few minutes before serving.
- 7
Serve the anticuchos hot, with a side of boiled potatoes or a fresh salad, and enjoy!
