Savor the rich, smoky flavors of Amatriciana, a classic Italian pasta dish featuring al dente spaghetti, crispy guanciale, and tangy San Marzano tomatoes. Perfect for a cozy weeknight dinner that feels special.

Ingredients

  • 400 grams spaghetti
  • 150 grams guanciale
  • 1 can San Marzano tomatoes
  • 100 grams Pecorino Romano cheese
  • 1 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Method

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

    While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the guanciale and cook until golden brown and crispy, about 5-7 minutes.

    Stir in the crushed San Marzano tomatoes and red pepper flakes (if using). Simmer for about 10 minutes, allowing the sauce to thicken. Season with salt and black pepper to taste.

    Once the spaghetti is cooked, reserve a cup of pasta water, then drain the pasta and add it directly to the skillet with the sauce.

    Toss the spaghetti in the sauce, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
