IngredientsWhat you need
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 cup unsalted butter
- 1/2 cup sugar
- 1 cup dulce de leche
- 1 tablespoon vanilla extract
- 1/4 cup powdered sugar
Method
- 1
Preheat your oven to 350°F (175°C).
- 2
In a bowl, cream together the softened butter and sugar until light and fluffy.
- 3
Add the vanilla extract and mix well. Gradually add the flour and cornstarch, mixing until a soft dough forms.
- 4
Roll the dough out on a floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out circles.
- 5
Place the circles on a baking sheet lined with parchment paper and bake for about 10 minutes or until lightly golden.
- 6
Once cooled, spread a generous amount of dulce de leche on the bottom of one cookie and sandwich it with another cookie.
- 7
Dust the alfajores with powdered sugar before serving.
