Savor the comforting warmth of Adasi, a hearty Middle Eastern lentil dish infused with turmeric and fresh parsley. Ideal for a cozy weeknight dinner or a nourishing lunch, it's both simple and satisfying.
IngredientsWhat you need
- 1 cup green lentils
- 4 cups water
- 1 medium onion
- 2 tablespoons olive oil
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons fresh parsley
Method
- 1
In a large pot, combine the rinsed green lentils and water. Bring to a boil over medium heat.
- 2
Once boiling, reduce the heat to low and let the lentils simmer for about 20-25 minutes, or until tender.
- 3
While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until golden brown.
- 4
Stir in the turmeric powder, salt, and black pepper, cooking for another 1-2 minutes until fragrant.
- 5
Once the lentils are tender, drain any excess water and add them to the skillet with the sautéed onion mixture. Stir to combine.
- 6
Cook everything together for an additional 5 minutes, allowing the flavors to meld.
- 7
Serve hot, garnished with fresh parsley.
