Experience the heartwarming flavors of Persian cuisine with Adas Polo, a fragrant blend of basmati rice and lentils, seasoned with turmeric and sautéed onions. Ideal for a cozy weeknight dinner or a special gathering with loved ones.
IngredientsWhat you need
- 2 cups basmati rice
- 1 cup lentils
- 2 tablespoons oil
- 1 medium onion
- 1 teaspoon turmeric powder
- Salt to taste salt
- Water as needed water
Method
- 1
In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until golden brown.
- 2
Add the turmeric powder to the onions and stir for about 1 minute to release its aroma.
- 3
Add the rinsed lentils to the pot and stir well. Pour in enough water to cover the lentils by about an inch. Bring to a boil.
- 4
Once boiling, reduce heat to low, cover, and simmer for about 20 minutes or until the lentils are tender.
- 5
Meanwhile, in another large pot, bring salted water to a boil and add the soaked basmati rice. Cook for about 10 minutes or until the rice is al dente.
- 6
Drain the rice and gently combine it with the cooked lentils in the pot. Stir carefully to avoid breaking the rice grains.
- 7
Cover the pot with a lid and cook on low heat for an additional 15-20 minutes to allow the flavors to meld.
- 8
Serve Adas Polo warm, garnished with additional sautéed onions or nuts if desired.
