- 2 tablespoons vegetable oil
- 2 medium onions, chopped
- 2 cups heavy cream
- 1 cup red wine
- 2 teaspoons dried thyme

- 1 tablespoon fresh parsley, chopped
Method

Heat the vegetable oil in a large pot over medium-high heat.

Add the pieces of hare and brown them on all sides, then remove from the pot and set aside.

In the same pot, add the chopped onions and sauté until they are translucent.

Return the browned hare to the pot, add the red wine, and bring to a simmer.

Add the heavy cream and thyme, then cover and cook on low heat for about 1.5 hours or until the hare is tender.
