Savor the comforting warmth of spiced yams cooked in rich coconut milk, infused with ginger and garlic. This vibrant dish is perfect for a cozy weeknight dinner or a festive gathering with friends and family.

Ingredients

  • 1 kg yams
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh ginger
  • 2 cloves garlic
  • 1 cup coconut milk

Method

    Begin by peeling the yams and cutting them into even chunks.

    In a large pot, bring salted water to a boil. Add the yam chunks and cook for about 15 minutes or until tender.

    Drain the yams and let them cool slightly.

    In a large frying pan, heat the vegetable oil over medium heat. Add the minced ginger and garlic, and sauté until fragrant.

    Add the yam chunks to the frying pan, and season with salt and black pepper. Fry for about 10 minutes, turning occasionally until they are nicely browned.
