- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh ginger
- 2 cloves garlic
- 1 cup coconut milk

Begin by peeling the yams and cutting them into even chunks.

In a large pot, bring salted water to a boil. Add the yam chunks and cook for about 15 minutes or until tender.

Drain the yams and let them cool slightly.

In a large frying pan, heat the vegetable oil over medium heat. Add the minced ginger and garlic, and sauté until fragrant.
