Savor the heartwarming taste of Vareniki, delightful Ukrainian dumplings filled with creamy potatoes, enveloped in tender dough. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1 cup water
  • 1 cup potatoes
  • 1 tsp salt

Method

  1. 1

In a large bowl, combine the flour and 1 tsp of salt. Make a well in the center and add the egg and water.

  2. 2

Mix the ingredients until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

  3. 3

Wrap the dough in plastic wrap and let it rest for 30 minutes.

  4. 4

While the dough is resting, prepare the filling by mixing the mashed potatoes with a pinch of salt.

  5. 5

Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a glass or cutter.

  6. 6

Place a teaspoon of potato filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

  7. 7

Bring a large pot of salted water to a boil. Cook the vareniki in batches for about 5-7 minutes or until they float to the surface.

  8. 8

Remove with a slotted spoon and serve hot with sour cream or butter.
