- 1 large egg
- 1 cup water
- 1 cup potatoes
- 1 tsp salt

In a large bowl, combine the flour and 1 tsp of salt. Make a well in the center and add the egg and water.

Mix the ingredients until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

Wrap the dough in plastic wrap and let it rest for 30 minutes.

While the dough is resting, prepare the filling by mixing the mashed potatoes with a pinch of salt.

Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a glass or cutter.

Place a teaspoon of potato filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Bring a large pot of salted water to a boil. Cook the vareniki in batches for about 5-7 minutes or until they float to the surface.
