Chocolate Cookie Base

- 220 g chocolate biscuits
- 110 g unsalted butter (melted)
- 1 pinch fine salt

Mix finely crushed biscuits with melted butter and salt. Press firmly into a lined ring mould. Chill for 20 minutes.
Chocolate Cheesecake Filling
What you need
- 500 g cream cheese
- 250 g dark chocolate
- 300 ml whipping cream (cold)
- 90 g icing sugar (sifted)
- 25 g Dutch-processed cocoa powder
- 2 tsp vanilla extract
- 6 g gelatin
- 30 g water
- 2.5 g agar
- 50 g water

Melt chocolate gently and cool to lukewarm.

Bloom gelatin and melt gently. For agar, boil with water for 1 minute.

Beat cream cheese, icing sugar, cocoa, and vanilla until perfectly smooth. Stream in melted chocolate slowly. Add gelatin or agar. Fold in softly whipped cream.
Optional Glossy Chocolate Top
What you need
- 120 g dark chocolate
- 120 ml warm cream
- 10 g unsalted butter
Method

Pour warm ganache on top, tilt gently, chill until set.
Assembly

Pour filling over base, cleanly, chill 4-5 hours or overnight.
Notes
Texture should slice clean yet melt instantly on the palate. Always add chocolate to cream cheese for silkiness. Serve cool, not refrigerator-cold, for the best mouthfeel.
