Pastry
What you need
- 2.5 cups all purpose flour
- 1 tsp salt
- 1 cup cold butter or lard, cubed
- 5 to 7 tbsp ice water

Mix flour and salt. Rub in butter until crumbly. Add ice water gradually until dough comes together. Divide in two, wrap, and chill for 30 minutes.
Filling
What you need
- 500 g minced pork (or half pork, half beef)
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 0.5 cup beef stock
- 0.5 tsp ground cinnamon
- 0.25 tsp ground cloves
- 0.25 tsp ground nutmeg
- 0.25 tsp allspice
- Salt and black pepper to taste
- 1 small potato, finely grated (for binding)
Method

Brown the meat in a pan. Add onion and garlic, cook until soft. Stir in stock, spices, salt, pepper, and grated potato. Simmer gently until thick and almost dry. Cool completely.
Assembly

Roll out one pastry disc and line a pie dish. Fill with cooled meat mixture. Cover with top pastry, seal edges, and cut steam vents.
Notes
Cooling the filling prevents soggy pastry. Spices should be subtle, warm, and aromatic. Leftovers taste even better the next day.
