Savor the rich, comforting flavors of Tortilla Española, a classic Spanish dish made with tender potatoes, sweet onions, and fluffy eggs. Ideal for a cozy weeknight dinner or a delightful brunch with friends.

Ingredients

  • 4 large eggs
  • 2 medium potatoes
  • 1 medium onion
  • 1/2 cup olive oil
  • to taste salt
  • to taste black pepper

Method

  1. 1

Heat the olive oil in a large non-stick frying pan over medium heat.

  2. 2

Add the sliced potatoes and onion (if using) into the pan. Cook gently, stirring occasionally, until the potatoes are tender, about 10-15 minutes.

  3. 3

Once the potatoes are cooked, drain them from the oil and let them cool slightly. Reserve the oil for later.

  4. 4

In a bowl, beat the eggs and season with salt and pepper. Add the cooled potatoes and mix gently until combined.

  5. 5

Add a little of the reserved olive oil back into the pan and heat over medium heat. Pour the egg and potato mixture into the pan, spreading it evenly.

  6. 6

Cook for about 5 minutes or until the edges start to set. Carefully flip the tortilla using a plate to cook the other side for another 5 minutes.

  7. 7

Once cooked through, slide the tortilla onto a plate and let it cool slightly before slicing it into wedges.

  8. 8

Serve warm or at room temperature, optionally garnished with fresh herbs.
