- 2 medium potatoes
- 1 medium onion
- 1/2 cup olive oil

Method

Heat the olive oil in a large non-stick frying pan over medium heat.

Add the sliced potatoes and onion (if using) into the pan. Cook gently, stirring occasionally, until the potatoes are tender, about 10-15 minutes.

Once the potatoes are cooked, drain them from the oil and let them cool slightly. Reserve the oil for later.

In a bowl, beat the eggs and season with salt and pepper. Add the cooled potatoes and mix gently until combined.

Add a little of the reserved olive oil back into the pan and heat over medium heat. Pour the egg and potato mixture into the pan, spreading it evenly.

Cook for about 5 minutes or until the edges start to set. Carefully flip the tortilla using a plate to cook the other side for another 5 minutes.

Once cooked through, slide the tortilla onto a plate and let it cool slightly before slicing it into wedges.
