Indulge in the heartwarming comfort of Toad-in-the-Hole, a classic British dish featuring succulent pork sausages nestled in a fluffy Yorkshire pudding batter. Perfect for a cozy weeknight dinner or a weekend gathering with friends.

- 400 g Pork Sausages
- 2 medium onions, cut into thick wedges
- 150 ml Apple Juice
- Pinch dried sage (optional)
- 2 tbsp olive oil
- 2 medium eggs, plus 1 egg yolk
- 100 g plain flour
- 225 ml milk

Preheat oven to 220°C.

Pour oil into a med-sized roasting tin and place in oven.

Fry sausages in a non-stick frying pan for 4-5 mins.

Stir in onions and fry for a further 5-7 mins.

Pour in apple juice, add dried sage, and bring to boil. Let liquid bubble for 5-7 mins until it reduces to a sticky glaze.

Whisk together flour, eggs, and milk to make a smooth batter.

Cut sausages in half. Carefully add sausages to tin, then immediately add batter.

Return to oven for 25-30 mins.
Notes
