- 1 kg beef tripe
- 300 g beef shank
- 1 cup corn
- 2 medium potatoes
- 1 large onion
- 2 cloves garlic
- 1 tbsp cumin
- 1 liter water

In a large pot, bring 1 liter of water to a boil. Add the beef tripe and beef shank. Cook for about 10 minutes and then drain the water to remove impurities.

Return the cleaned meats to the pot and add 2 liters of fresh water. Add the chopped onion, minced garlic, and cumin. Bring to a boil and reduce heat to a simmer. Cover and cook for about 1 hour.

After an hour, add the potatoes and corn to the pot. Stir gently and continue to simmer for an additional 30 minutes, or until the potatoes are tender and the meats are fully cooked.

Remove the beef shank and chop it into bite-sized pieces. Return the chopped beef to the soup. Adjust seasoning as necessary with salt and pepper.
