Indulge in the sweet, nutty flavors of Sohan, a traditional Persian confection made with rice flour, almonds, and fragrant cardamom. Perfect for festive occasions or as a delightful treat with tea.
IngredientsWhat you need
- 250 g sugar
- 100 ml water
- 100 g rice flour
- 50 g butter
- 100 g sliced almonds
- 1 tsp cardamom powder
- 1 tbsp rose water
Method
- 1
In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves completely.
- 2
Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes until it thickens slightly.
- 3
In a separate pan, melt the butter over low heat. Add the rice flour and stir continuously for about 15-20 minutes until it turns golden brown.
- 4
Gradually pour the sugar syrup into the rice flour mixture while stirring constantly to prevent lumps from forming.
- 5
Add the cardamom powder and rose water, mixing well to combine all ingredients thoroughly.
- 6
Pour the mixture into a greased tray and spread it evenly. Sprinkle sliced almonds on top.
- 7
Allow the Sohan to cool at room temperature for about 1 hour, then cut it into squares or diamond shapes.
- 8
Store in an airtight container and enjoy as a sweet treat with tea or coffee.
