Indulge in the sweet, nutty flavors of Sohan, a traditional Persian confection made with rice flour, almonds, and fragrant cardamom. Perfect for festive occasions or as a delightful treat with tea.

Ingredients

  • 250 g sugar
  • 100 ml water
  • 100 g rice flour
  • 50 g butter
  • 100 g sliced almonds
  • 1 tsp cardamom powder
  • 1 tbsp rose water

Method

    In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves completely.

    Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes until it thickens slightly.

    In a separate pan, melt the butter over low heat. Add the rice flour and stir continuously for about 15-20 minutes until it turns golden brown.

    Gradually pour the sugar syrup into the rice flour mixture while stirring constantly to prevent lumps from forming.
