Warm up with a bowl of Shchi, a traditional Russian cabbage soup brimming with savory chicken broth, tangy sauerkraut, and hearty vegetables. Ideal for cozy weeknight dinners or a comforting lunch.

- 1 medium onion
- 2 medium carrots
- 1 medium potato
- 1 liter chicken broth
- 200 grams sauerkraut
- 1 teaspoon dried dill

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.

Stir in the grated carrots and diced potato, cooking for another 5-7 minutes until they soften.

Pour in the chicken broth, bring to a boil, and then reduce the heat to simmer for about 20 minutes.

Add the drained sauerkraut and dried dill, stirring well. Let the soup simmer for another 15 minutes.
