Indulge in these tender, buttery scones, lightly sweetened and enriched with vanilla. Perfect for a cozy weekend brunch or an afternoon tea, they pair beautifully with jam and clotted cream.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method

    Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

    Add the cold, cubed butter to the flour mixture, and use your fingers or a pastry cutter to rub it in until the mixture resembles coarse crumbs.

    Make a well in the center, pour in the milk and vanilla extract, and mix gently until just combined.

    Turn the dough out onto a lightly floured surface and gently knead it a few times until smooth. Pat it to about 2 cm thick.

    Use a round cutter to cut out the scones and place them on the prepared baking tray.

    Bake in the preheated oven for 12-15 minutes or until golden brown.
