Ingredients

  • 1 medium zucchini
  • 1 medium red bell pepper
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 lemon zest and juice
  • to taste pinch salt and pepper
  • fresh herbs to taste dill or parsley

    Preheat your oven to 200°C (400°F).

    Prepare two large pieces of parchment paper, each about 12x16 inches.

    Place a salmon fillet in the center of each parchment piece. Surround with sliced zucchini and red bell pepper.
