IngredientsWhat you need
- -17 °C salmon
- 1 medium zucchini
- 1 medium red bell pepper
- 2 cloves garlic
- 2 tablespoons olive oil
- 1 lemon zest and juice
- to taste pinch salt and pepper
- fresh herbs to taste dill or parsley
Method
- 1
Preheat your oven to 200°C (400°F).
- 2
Prepare two large pieces of parchment paper, each about 12x16 inches.
- 3
Place a salmon fillet in the center of each parchment piece. Surround with sliced zucchini and red bell pepper.
- 4
Sprinkle minced garlic, lemon zest, and lemon juice over the salmon and vegetables. Drizzle with olive oil and season with salt and pepper.
- 5
Fold the parchment paper over the salmon and vegetables, sealing the edges to create a tight packet.
- 6
Place the packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
- 7
Carefully open the packets (watch out for steam) and transfer to plates. Garnish with fresh herbs before serving.
