Savor the comforting taste of Swiss Rösti, a crispy potato dish enriched with melted cheese and fresh herbs. Ideal for a cozy weeknight dinner or a delightful brunch treat that will warm your heart.

- 1 kg potatoes
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated cheese
- 1 tbsp chopped fresh herbs

Peel the potatoes and wash them thoroughly. Boil in salted water for about 10-15 minutes until just tender but firm.

Drain the potatoes and let them cool slightly. Once cool enough to handle, grate them using a box grater or a food processor.

In a large skillet, heat the butter over medium heat until melted. Add the grated potatoes to the skillet and season with salt and pepper. If using, sprinkle the grated cheese evenly over the top.

Press the mixture down with a spatula to form a compact cake. Cook for about 10-15 minutes until the bottom is golden brown and crispy.

Carefully flip the rösti over using a plate or a lid. Cook on the other side for an additional 10-15 minutes until golden and crispy.

Once both sides are cooked, remove from heat and let it rest for a few minutes. Garnish with chopped fresh herbs if desired.
