Savor the crispy delight of Řízek, a traditional Czech dish featuring tender pork loin breaded to golden perfection. Ideal for a cozy weeknight dinner or a festive gathering, serve with a wedge of lemon for a zesty finish.
IngredientsWhat you need
- 4 pieces pork loin
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup vegetable oil
- 1 lemon for serving
Method
- 1
Begin by flattening the pork loin pieces to about 1/2 inch thickness using a meat mallet. This ensures even cooking.
- 2
Prepare your breading station by placing flour in one shallow dish, beaten eggs in a second dish, and breadcrumbs mixed with salt and pepper in a third dish.
- 3
Dredge each piece of pork in flour, shaking off excess, then dip into beaten eggs, and finally coat in breadcrumbs, pressing down gently to ensure the breadcrumbs stick.
- 4
In a large frying pan, heat vegetable oil over medium heat. Once hot, add the breaded pork pieces, cooking for about 4-5 minutes on each side until they are golden brown and cooked through.
- 5
Remove the cooked řízek from the pan and let them drain on paper towels to remove excess oil.
- 6
Serve hot with lemon wedges on the side, allowing diners to squeeze lemon juice over the řízek before eating.
